An Italian Method of Olive Oil Production




The Castelli Romani produces a smooth, full-flavored oil with little acidity. The men of the Società Agricolo Cooperativa Frantoio Sociale of Velletri gave a tour and explained the traditional process of how the olive is transformed into extra virgin olive oil. The olive press, frantoio uses traditional methods to press the olives without using heat.
